Filipino Food Pinakbet (by Island Pacific Supermarket)

I’ve tried pinakbet at a lot of parties and places, but Mama Garduno makes it best.<3 She always puts a lot of eggplant and long beans for me, my faves! I’ve made it several times on my own, but I swear, it’s still nowhere near as awesome as her’s. I can’t wait to go home this weekend and help her cook for my sister-in-law’s baby shower. :]
